Whole Wheat Vegan Cornbread

  • 2 teaspoons apple cider vinegar or lemon juice
  • 2 cups milk (non dairy or dairy)
  • 2 tablespoons maple syrup
  • 6 tablespoons oil
  • 1 1/2 cups cornmeal
  • 1 3/4 cups whole wheat flour
  • 2 teaspoons baking soda
  • 1 teaspoons salt


  1. Preheat the oven to 350 degrees.

  2. Mix the cornmeal, flour, baking soda, salt, and sugar together. Set aside.

  3. Mix the apple cider vinegar, milk, maple syrup, and oil together.

  4. Make a well in the center of the dry ingredients, and add the wet mixture. Mix until combined and no flour is visible.

  5. Pour the batter into either a 12 inch cast iron skillet or a 9x9 square baking pan.

  6. Bake for 30-40 minutes, or until the top is lightly golden and a toothpick inserted into the center of the cornbread comes out clean.
